Saucy Wet Burritos

These Saucy Wet Burritos are a hearty, crowd-pleasing meal featuring seasoned ground beef and refried beans tucked into soft tortillas, all smothered in a rich red sauce and melted cheese.

Ingredients

  • 1 pound ground beef
  • 1 can refried beans
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 1 can (10 oz) enchilada sauce
  • 2 cups shredded cheddar or Mexican blend cheese
  • 6–8 large flour tortillas
  • Optional Toppings: Diced tomatoes, fresh cilantro, and sour cream

Preparation

1. Cook the Filling

In a large skillet over medium-high heat, brown the ground beef with the chopped onion until the meat is no longer pink. Drain any excess fat. Stir in the taco seasoning and the can of refried beans, mixing until well combined and heated through.

2. Assemble the Burritos

Preheat your oven to 350°F (175°C). Warm the tortillas slightly to make them pliable. Spoon a generous amount of the beef and bean mixture into the center of each tortilla. Roll them up tightly, tucking in the ends, and place them seam-side down in a greased baking dish.

3. Make them “Wet”

Pour the enchilada sauce evenly over the top of the assembled burritos, ensuring the edges are covered to prevent them from drying out. Sprinkle the shredded cheese generously over the sauce.

4. Bake and Garnish

Bake for 15–20 minutes, or until the sauce is bubbling and the cheese is completely melted and slightly golden. Remove from the oven and top with fresh diced tomatoes and chopped cilantro before serving.


Pro Tip: For an extra kick of flavor, sauté the chopped onion with a clove of minced garlic before adding the beef. Serve these burritos with a side of Mexican rice or a simple green salad to balance the richness of the sauce.
