Instructions
- In a bowl, whisk together eggs, milk, sparkling water, sugar, salt, and melted butter.
- Gradually whisk in flour until the batter is smooth and thin.
- Let the batter rest for 20–30 minutes.
- Heat a lightly greased nonstick skillet over medium heat.
- Pour a small ladle of batter into the pan and swirl quickly to coat the surface thinly.
- Cook for about 1 minute until edges lift slightly, then flip and cook the other side briefly.
- Stack cooked pancakes on a plate and keep covered.
- Spread with your favorite filling and roll or fold.

- The batter should be thinner than American pancake batter.
