Hungarian Pancakes – Palacsinta

Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1 1/4 cups milk
  • 1/2 cup sparkling water
  • 1 tbsp sugar
  • Pinch of salt
  • 1 tbsp melted butter or oil

Filling Ideas

  • Apricot jam
  • Sweetened cottage cheese
  • Nutella
  • Ground walnuts with sugar
  • Cocoa powder and sugar


Instructions

  1. In a bowl, whisk together eggs, milk, sparkling water, sugar, salt, and melted butter.
  2. Gradually whisk in flour until the batter is smooth and thin.
  3. Let the batter rest for 20–30 minutes.
  4. Heat a lightly greased nonstick skillet over medium heat.
  5. Pour a small ladle of batter into the pan and swirl quickly to coat the surface thinly.
  6. Cook for about 1 minute until edges lift slightly, then flip and cook the other side briefly.
  7. Stack cooked pancakes on a plate and keep covered.
  8. Spread with your favorite filling and roll or fold.

Tips

  • The batter should be thinner than American pancake batter.
  • Sparkling water helps make the pancakes light and delicate.
  • Use a small skillet for the most traditional look.
