Pogácsa – Hungarian Potato Biscuits

Ingredients

  • 2 medium potatoes, boiled and mashed
  • 3 cups all-purpose flour
  • 1 packet instant yeast (7 g)
  • ½ cup warm milk
  • ½ cup butter or lard, softened
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 egg yolk (for brushing)

Instructions

  1. In a small bowl, mix warm milk, sugar, and yeast. Let sit for 5–10 minutes until foamy.
  2. In a large bowl, combine flour and salt.
  3. Add mashed potatoes, butter, egg, and yeast mixture.
  4. Knead until a soft, smooth dough forms.
  5. Cover and let rise for about 1 hour, or until doubled in size.
  6. Roll dough to about ¾-inch thickness on a floured surface.
  7. Score the top lightly with a knife in a crisscross pattern.
  8. Cut out small rounds using a biscuit cutter or glass.
  9. Place on a baking tray lined with parchment paper.
  10. Brush tops with egg yolk.
  11. Bake at 375°F (190°C) for 20–25 minutes until golden brown.
