Stove Top Stuffing Meatloaf 

This Stove Top Stuffing Meatloaf is a clever twist on a classic, using boxed stuffing mix instead of traditional breadcrumbs. This swap provides built-in seasoning and a light, airy texture that keeps the loaf moist.

Ingredients

  • Ground Beef: 2 lbs (80/20 or 90/10 lean)
  • Stuffing Mix: 1 box (6 oz) Stove Top Stuffing (Chicken or Savory Herb)
  • Liquid: 1 cup water or beef broth
  • Eggs: 2 large, lightly beaten
  • Topping: 1/2 cup ketchup or BBQ sauce
  • Optional: 1/2 small onion, finely diced

Prep the Stuffing

In a large bowl, combine the stuffing mix with the water or broth. Let it sit for a few minutes to soften before adding other ingredients.

Mix the Base

Gently combine

Add the ground beef, beaten eggs, and diced onions to the bowl. Use your hands or a fork to mix just until combined—do not overmix, as this leads to a tough meatloaf.

Shape and Bake

45 minutes at 375°F

Press the mixture into a 9×5 inch loaf pan or shape it into a loaf on a rimmed baking sheet. Bake in a preheated oven for 45 minutes.

Glaze and Finish

Final 15 minutes

Spread the ketchup or BBQ sauce evenly over the top of the loaf. Return to the oven and bake for another 15 minutes, or until the internal temperature reaches 160°F.


Chef’s Tip: Allow the meatloaf to rest for at least 10 minutes after removing it from the oven. This ensures the juices redistribute, making it much easier to slice without falling apart.
