ONE POT MEXICAN RICE CASSEROLE 

This flavorful One Pot Mexican Rice Casserole is a complete meal made in a single skillet, featuring seasoned ground beef, tender rice, and a melty cheese topping.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups beef broth
  • 1 tbsp taco seasoning
  • 1 ½ cups shredded Mexican blend cheese
  • Salt and pepper to taste

Preparation

Brown the Beef

5-7 minutes

In a large skillet over medium-high heat, cook the ground beef with the diced onion and bell pepper until the beef is no longer pink. Drain any excess grease.

Sauté Aromatics

1 minute

Stir in the minced garlic and taco seasoning. Cook for about one minute until fragrant.

Add Base Ingredients

Combine liquids and grains

Stir in the uncooked rice, black beans, diced tomatoes (with their juices), and beef broth. Season with salt and pepper.

Simmer

18-20 minutes

Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a tight-fitting lid and simmer until the rice is tender and the liquid is absorbed.

Melt the Cheese

2-3 minutes

Remove from heat and sprinkle the shredded cheese evenly over the top. Replace the lid for a few minutes until the cheese is completely melted and bubbly.
