ONE POT MEXICAN RICE CASSEROLE
This flavorful One Pot Mexican Rice Casserole is a complete meal made in a single skillet, featuring seasoned ground beef, tender rice, and a melty cheese topping.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice, uncooked
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups beef broth
- 1 tbsp taco seasoning
- 1 ½ cups shredded Mexican blend cheese
- Salt and pepper to taste

Brown the Beef

In a large skillet over medium-high heat, cook the ground beef with the diced onion and bell pepper until the beef is no longer pink. Drain any excess grease.

Stir in the minced garlic and taco seasoning. Cook for about one minute until fragrant.

Combine liquids and grains
Stir in the uncooked rice, black beans, diced tomatoes (with their juices), and beef broth. Season with salt and pepper.
