Crispy Beef Samosas

Ingredients

The Filling:

  • 1 lb ground beef (80/20 for best flavor)
  • 2 medium yellow onions, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 green chilies, finely chopped (optional)
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp turmeric powder
  • 1 tsp garam masala
  • ½ cup fresh cilantro, chopped
  • Salt and pepper to taste

The Wrapper & Assembly:

  • 1 pack Samosa pads or spring roll pastry
  • Flour paste: 2 tbsp flour mixed with 1 tbsp water (to act as “glue”)
  • Vegetable oil for deep frying

Preparation

1. Sauté the Filling

Brown the ground beef in a large skillet over medium-high heat, breaking it into small crumbles. Drain any excess fat. Add the onions, garlic, ginger, and chilies. Sauté until the onions are translucent and fragrant.

2. Season and Cool

Stir in the cumin, coriander, turmeric, salt, and pepper. Cook for another 3–4 minutes to toast the spices. Remove from heat and stir in the garam masala and fresh cilantro. Important: Let the filling cool completely before wrapping to prevent the pastry from becoming soggy.

3. Fold and Seal

Place a strip of pastry on a flat surface. Place a spoonful of beef mixture at one end. Fold the pastry diagonally to form a triangle, continuing to fold until the end of the strip is reached. Brush the final edge with the flour paste and press firmly to seal.

4. Fry to Golden

Heat 2 inches of oil in a heavy-bottomed pot to 350°F (175°C). Fry the samosas in small batches for 3–5 minutes, turning once, until they are evenly golden brown and crisp. Drain on paper towels and serve hot with mint chutney or sweet chili sauce.
