Chicken & mushroom dish Recipe
This creamy Chicken and Mushroom dish is a versatile, high-protein staple that pairs earthy flavors with a velvety sauce. It is an ideal meal for those focusing on protein-dense comfort food that is quick enough for a weeknight dinner.
Ingredients
- 1.5 lbs chicken breast or thighs, sliced into strips
- 8 oz cremini or white button mushrooms, sliced
- 1 cup heavy cream or half-and-half
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme or fresh parsley
- Salt and pepper to taste
Instructions
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then sauté until golden brown and cooked through. Remove from the pan and set aside.
- Sauté the Mushrooms: In the same skillet, add the sliced mushrooms. Cook for 5–7 minutes until they have released their moisture and turned deep brown. Add the minced garlic during the last minute of cooking.
- Simmer the Sauce: Lower the heat to medium and pour in the heavy cream. Stir in the thyme or parsley and let the sauce simmer for 2–3 minutes until it begins to thicken slightly.
- Combine: Return the cooked chicken to the skillet. Toss everything together to ensure the chicken is fully coated in the creamy mushroom sauce. Allow it to heat through for another minute.
- Serve: This dish is excellent served over cauliflower rice for a low-carb option, or traditional pasta or mashed potatoes for a more indulgent meal.
Why It Works
- Protein Focus: Using chicken breast provides a lean, high-protein base that supports muscle maintenance and satiety.
- One-Pan Efficiency: Sautéing everything in a single skillet preserves the “fond” (the browned bits) from the chicken, which adds significant depth to the mushroom sauce.
