Shrimp & Bell Pepper Stir-Fry recipe

This vibrant Shrimp and Bell Pepper Stir-Fry is a fast, high-protein meal perfect for busy weeknights. By combining succulent shrimp with crisp peppers and onions, you create a balanced dish that is as colorful as it is flavorful.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 2 tbsp olive oil or sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce or tamari
  • Optional: Red pepper flakes for heat

Instructions

  1. Prep the Shrimp: Ensure the shrimp are thoroughly patted dry to achieve a good sear. Season lightly with salt and pepper.
  2. Sauté the Aromatics: Heat oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for 30 seconds until fragrant.
  3. Sear the Shrimp: Add the shrimp to the pan in a single layer. Cook for about 2 minutes per side until they turn pink and opaque, then remove them from the pan and set aside.
  4. Cook the Vegetables: In the same pan, add the sliced onions and bell peppers. Stir-fry for 3–5 minutes until the vegetables are tender-crisp.
  5. Toss and Finish: Return the shrimp to the pan. Pour in the soy sauce and add red pepper flakes if desired. Toss everything together for 1 minute until well-coated and heated through.
  6. Serve: Enjoy immediately on its own for a low-carb option, or serve over steamed rice or quinoa.
