Air Fryer Zucchini with Parmesan

Ingredients:

  • 3 medium zucchini, about 4 cups, cubed
  • Spray olive oil
  • 1 teaspoon Italian seasoning
  • ½ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

Instructions:

  1. Preheat your air fryer to 400°F (200°C).
  2. Place the cubed zucchini in a large mixing bowl.
  3. Lightly coat the zucchini with spray olive oil.
  4. In a small bowl, combine the Italian seasoning, Parmesan cheese, garlic powder, salt, and pepper.
  5. Sprinkle the seasoning mixture over the zucchini and toss until each piece is evenly coated.
  6. Arrange the zucchini in a single layer in the air fryer basket, working in batches if necessary to avoid overcrowding.
  7. Air fry for 8–10 minutes, shaking the basket halfway through, until the zucchini is tender and the Parmesan coating is golden brown and crisp.
  8. Serve immediately while hot.
