Air Fryer Zucchini with Parmesan
Ingredients:
- 3 medium zucchini, about 4 cups, cubed
- Spray olive oil
- 1 teaspoon Italian seasoning
- ½ cup grated Parmesan cheese
- ½ teaspoon garlic powder
- Salt and black pepper to taste
Instructions:
- Preheat your air fryer to 400°F (200°C).
- Place the cubed zucchini in a large mixing bowl.
- Lightly coat the zucchini with spray olive oil.
- In a small bowl, combine the Italian seasoning, Parmesan cheese, garlic powder, salt, and pepper.
- Sprinkle the seasoning mixture over the zucchini and toss until each piece is evenly coated.
- Arrange the zucchini in a single layer in the air fryer basket, working in batches if necessary to avoid overcrowding.
- Air fry for 8–10 minutes, shaking the basket halfway through, until the zucchini is tender and the Parmesan coating is golden brown and crisp.
- Serve immediately while hot.
