Egg & Ham Breakfast Sandwich with Melty Cheddar

For a breakfast that hits all the right notes—savory ham, creamy eggs, and that essential “cheese pull”—this sandwich is a reliable classic. It balances the crunch of butter-toasted sourdough with a rich, soft filling.

Egg & Ham Breakfast Sandwich with Melty Cheddar

Ingredients

  • 2 slices bread (thick-cut white or sourdough)
  • 3 tbsp unsalted butter (divided)
  • 1 slice sharp cheddar cheese
  • 2-3 slices deli ham
  • 1 large egg
  • Salt and freshly cracked black pepper to taste
  • Fresh parsley or chives (optional garnish)

Instructions

  1. Prepare the Bread: Spread 1 tablespoon of butter on one side of each bread slice. Heat a large skillet over medium heat and place the bread butter-side down. Toast until golden brown and crisp, then remove and set aside.
  2. Warm the Ham: In the same skillet, add a small pat of butter. Lightly sear the ham slices for about 30 seconds per side until warmed through and slightly caramelized. Move the ham to the side of the pan.
  3. Cook the Egg: Add the remaining butter to the skillet. Crack the egg into the pan. For a classic breakfast sandwich, over-medium is ideal—fry until the white is set but the yolk remains jammy. Season with salt and pepper.
  4. Melt the Cheese: Place the sharp cheddar slice directly onto the hot egg while it is still in the pan. Cover with a lid for 30 seconds to ensure the cheese is fully melted and draped over the egg.
  5. Assemble: On the toasted side of one bread slice, layer the seared ham, followed by the cheesy egg. Top with the second slice of bread, toasted side facing out.
  6. Final Sear: If you prefer an extra-melty interior, place the assembled sandwich back in the skillet for 30 seconds per side, pressing down lightly with a spatula.
  7. Serve: Slice diagonally and garnish with fresh herbs if desired. Serve immediately while the cheese is at its meltiest.
