Crockpot Beef Tips and Noodles
Ingredients
- 1.5 lbs beef stew meat, cut into small chunks
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 packet brown gravy mix
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bag (12 oz) egg noodles
- 1/2 cup sour cream (optional, for creamier sauce)
- Fresh parsley, chopped (for garnish)
Instructions
Place the beef stew meat, chopped onion, and minced garlic into the slow cooker. In a small bowl, whisk together the beef broth, brown gravy mix, Worcestershire sauce, salt, and black pepper until well combined. Pour the liquid mixture over the beef and onions in the crockpot.
Cover and cook on low for 7–8 hours or on high for 3–4 hours, until the beef is tender and shreds easily with a fork.
About 20 minutes before serving, cook the egg noodles in a large pot of boiling salted water according to the package directions. Drain the noodles and set them aside.
If you prefer a creamier sauce, stir the sour cream into the beef mixture in the slow cooker just before serving. Add the cooked egg noodles to the crockpot and toss gently to coat with the gravy, or serve the beef tips directly over individual bowls of noodles. Garnish with fresh parsley.
