Speedy & Savory Broccoli and Mushroom Stir-Fry

This Speedy & Savory Broccoli and Mushroom Stir-Fry is a high-heat vegetarian dish that relies on the “fond” (browned bits) of the mushrooms to provide a deep, umami flavor profile. Because mushrooms contain a high percentage of water, they must be seared undisturbed to achieve the golden-brown texture shown in the image, rather than being steamed.

Ingredients

  • 2 cups Broccoli florets
  • 1 cup Mushrooms, sliced
  • 2 tbsp Olive oil
  • 1 tsp Sesame seeds (garnish)
  • Salt and cracked black pepper to taste

Preparation Method

Sear the mushrooms

Heat the olive oil in a large skillet or wok over medium-high heat. Add the sliced mushrooms in a single layer. Let them sit undisturbed for 2 minutes to develop a deep brown crust before tossing.

Add the broccoli florets to the pan. If the pan looks dry, add a splash of water or broth to create steam, which helps tenderize the broccoli while the mushrooms continue to crisp.

Remove from heat immediately to prevent the broccoli from overcooking. Sprinkle with sesame seeds for added texture and a nutty finish.


Umami Boost: For a deeper flavor, you can deglaze the pan with a teaspoon of soy sauce or oyster sauce just before removing it from the heat. This will pick up the caramelized mushroom bits and coat the broccoli.
