Air fryer grilled cheese sandwiches are a revelation for anyone looking to achieve a perfectly even, golden-brown crust without standing over a stove. By using the air fryer, you get a crunch that is far more consistent than a traditional skillet, while the circulating air ensures the cheese is melted to a gooey perfection.

Ingredients

  • 8 slices of thick-cut white or brioche bread
  • 8-12 slices of sharp cheddar, gruyère, or your favorite melting cheese
  • 1/2 cup mayonnaise (the secret to the perfect golden crust)

Preparation Method

Preheat and prep

Preheat your air fryer to 370°F. Spread a thin, even layer of mayonnaise on one side of each bread slice. Mayonnaise has a higher smoke point than butter, resulting in a superior, non-greasy crunch.

Assemble the sandwiches

Layer for maximum melt

Place 4 slices of bread, mayo-side down, on a clean surface. Layer 2–3 slices of cheese on each. Top with the remaining bread slices, mayo-side facing up.

Preventing fly-aways

Place the sandwiches in the air fryer basket in a single layer. If your air fryer has a powerful fan, secure the top slice of bread with a toothpick to keep it from shifting.

First side air fry

4-5 minutes

Cook for 4 to 5 minutes until the top is golden brown and the cheese has begun to soften.

Flip and finish

3-4 minutes

Carefully flip the sandwiches using a spatula. Air fry for another 3 to 4 minutes until the second side is toasted to your liking and the cheese is fully melted.


Why Mayonnaise? While butter is classic, mayonnaise contains egg and oil which creates a beautiful, deep mahogany color and a crispness that doesn’t get soggy as quickly as butter-toasted bread.
